I checked a video thumbnail request on your website, and it returns empty (error):

Normally, Files Gallery will diagnose image resize errors, but since the problem occurs from exec()
command to external FFMpeg application, there are no errors. I tested locally, and the video converted without errors:
You would have to test FFMPEG locally on one of the video files that fails. Open terminal / command-line application, navigate to the folder where the videos are and type:
ffmpeg -ss 3 -t 1 -hide_banner -i 20240610_08.47_Carmen.mp4 -frames:v 1 -an -vf "thumbnail,scale=480:320:force_original_aspect_ratio=increase,crop=480:320" -r 1 -y -f mjpeg test.jpg
What do you see?
If it works, which I doubt, it must mean there was a temporary error with perhaps too many files processing simultaneously. Then of course, it should work if you delete the cache. If it fails, which I guess it will, there will have to be an error. It could be for example the FFMpeg application on server is not updated, or maybe your server was simply processing too many videos simultaneously.
